In a new cooking class, Chef Cerda teaches guests to prepare a memorable seafood feast. The 90-minute session begins at 5 p.m. with participants (four to 12 people) meeting Gonzo in the main kitchen, where they help him select the best fish caught locally that very morning. Next, guests follow him to the resort's kitchen garden to harvest aromatic herbs, and then it's off to Esperanza's private beach to dig for Chocolate clams in the Sea of Cortez. Chef Gonzo shows everyone how to clean and prepare both clams and fish to make a traditional ceviche, while the remaining fish gets grilled as a pescadozarandeado over a wood-and-coal bonfire. The experience ends with a satisfying dinner right on the beach, washed down with one of Esperanza's signature mojitos.
